Title Modeling in food processing: Opportunities and limitations
Abstract A brief overview is given of the contributions computer modeling of food processes has given to increase understanding. Some lines of future contributions are given like trends in description of phase equilibria, linking scales, food informatics, CFD. Despite the rapid and sustained increase in computer power there are a number of limitations and rate limiting factors one needs to be aware of. These will be discussed briefly in the paper.
