| Title | Modelling and simulation of cooling and freezing processes | ||
| Abstract | In this lecture, some recent advances in the modelling and simulation of cooling and freezing processes will be reviewed. Modelling of heat and mass transfer in foods during cooling and freezing and of the associated microbial and sensory quality changes will be discussed first. It is further shown how computational fluid dynamics may be useful for designing cool rooms. Dynamic simulation of large cooling or freezing installations will be mentioned as well, with emphasis on energy consumption and control systems design. | ||

Its main research topics are: (i) postharvest physiology, (ii) transport of heat, gasses and moisture during storage, and (iii) quality of horticultural produce. In addition to the development of novel measurement techniques and the mathematical modelling of the underlying biophysical and biochemical phenomena, much attention is paid to the practical implementation of the research results. |
